The Ides of March means “the first new moon of a given month,” which falls between March 13-15. And for any Shakespearean fans, March 15 was the day Julius Caesar was assassinated in 44 BC. It also set the stage for civil war and the collapse of the Roman Republic.
But, to most of us, it means spring is soon here. We will be getting more sunlight everyday and the snow slowly starts melting a little each day. A reuben sandwich is a spring staple. It goes along with any spring salad or soup. I like both corn beef or roasted chicken sandwiches. It’s a refreshing light meal and reminds us spring will be here soon.

Spring Roasted Chicken Reuben Sandwich
• Reserved roasted chicken, deboned and shredded
• 8 slices rye bread
• 4 oz. Sliced Swiss cheese
• 1 lb. or 1 package sauerkraut, drained and squeezed dry
• 1/3 cup mayonnaise
• 2 cups spring salad mix
• 2 Tbs. Ketchup
Directions:
Spring Roasted Chicken Reuben Sandwich
First, turn on broiler with the rack four inches from the heat.
Take two pieces of rye bread, add Swiss cheese to one and put shredded chicken and sauerkraut on the other slice. In a small bowl, stir together mayo and ketchup, spoon over kraut.
Broil sandwiches about two minutes until cheese is melted. Remove and add lettuce to sandwich and cover with other slice of bread.
